Also known as the starter or mother dough or mother starter, sourdough uses live organisms, more specifically lactobacillus, that are found within the dough that allows it to keep for a long time; some bakers will keep the sourdough starter for years, maintaining and feeding it so that the starter can produce loaves of bread over years.
